ViceVersa is an Italian aperitivo bar with a distinctly Miami point of view from the minds of bartender Valentino Longo and Jaguar Sun’s Will Thompson and Carey Hynes. VICEVERSA is a playful way to say that there is no right time for aperitivo and that it may be enjoyed in the early hours or, vice versa, later in the evening too. In every cocktail, Italian spirits, vermouths, bitters, and amaros act as the main actors, while Miami’s seasonal ingredients and general way of life play the vital supporting role.


While you might come to ViceVersa for drinks, the food is worth staying for. Crafted by the team behind Jaguar Sun and Sunny’s, ViceVersa offers a wide range of crudos, such as Treasure Coast oysters, royal red shrimp, and bluefin tuna. Enjoy appetizers like fennel salad, house-made coppa and culatello served with oven-fired flatbread, stracciatella, and anchovies. Our main course features Neo-Neapolitan pizzas  that undergo a 48-hour natural fermentation. Mortadella, maitake mushroom, and soppressata pizza, just to mention few.

The Team Behind ViceVersa

Celebrated bartender Valentino Longo’s over 20 years of hospitality experience culminates at ViceVersa, the first bar he’s able to call his own. Beginning in his hometown of Rome at the legendary Hotel de Russie, he has worked in top hotel bars in London, Rome (again), and most recently Miami, which he has called home for the last seven years, where he’s most known as part of the opening team of The Champagne Bar at the Four Seasons at The Surf Club and serving as head bartender. In 2020, Longo was named Bombay Sapphire’s “Most Imaginative Bartender.”
Jaguar Sun’s Will Thompson and Carey Hynes are no strangers to the downtown Miami scene having received much acclaim for their intimate restaurant and cocktail bar. They’re expanding their operating presence, teaming up with Longo on ViceVersa to offer downtown residents and visitors to Miami with a complementary bar and dining experience with an Italian twist.
